Egg Muffins



I accidentally bought the Italian-style ground turkey and used that, and I couldn't tell a difference between that and the turkey sausage!

  • 1 pound lean ground turkey, I used 93% lean
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon dried sage
  • 1/2 teaspoon crushed red pepper flakes (more or less to taste)
  • 1 teaspoon dried oregano
  • Kosher or sea salt to taste

Chicken Saltimbocca

The baby kid and I tried this dish at the grocery store one day when a nice lady who cooked it in the store offered some to us. We both liked it, and I thought I would try it at home. Everyone loved it, so it's a keeper!

The only thing I did differently is skip the fresh sage. It was very strong in the one I sampled in the store. I sauteed some dried sage in butter and then brushed it on mine,  and it was delicious.

I made pasta with remaining sauce for the kids, and hubs and I had roasted asparagus with ours!

Greek Salad

I am definitely on a Greek salad kick. I made a huge one to share with my sisters last night, and we nearly devoured the entire thing. Here is a list of what I included, although I must admit that I copied one of my favorite restaurants, so it's not terribly original. Just delicious. 

romaine lettuce
grape tomatoes
sliced cucumbers
red onion
black olives
feta cheese
 thinly sliced Greek peppers (these were pepperoncini but banana peppers would have been fine)
yellow, orange and red peppers, sliced thinly and sauteed in olive oil until tender

I made this Greek salad dressing to go over the salad, and if I could only have one meal the rest of my life, this would probably be it.

Slow Cooking Enchiladas

This recipe was such a hit with everyone. It did take a little more prep time than most slow cooker recipes, and there weren't a lot of leftovers for the next day, but it was so good that it is definitely a keeper: 


I don't do canned enchilada sauce, and this sauce was really good. I'm glad to find it, because I have been looking for one for a long time.
